Green Tomato & Lemon Preserve – a tasting plate delight

If you are looking for a sensational preserve to serve with cheese, fish or on a tasting plate then my Green Tomato and Lemon Preserve has to on your to do list. It has the perfect balance between sweet and sour, quick & simple to make, and once tried,  you will keep a store of this in your cupboard (if you can stop your friends from stealing a jar when they visit!!)

This recipe makes 750g but I generally double the quantities as it is such a favorite.

Perfect with a crisp white such as a Sauvignon Blanc, Pinot Gris or Grigio.

 

GREEN TOMATO & LEMON PRESERVE

500g  (1.1lbs) green tomatoes

1/2 medium lemon, sliced

1/2 cup cold water

360g (14oz) sugar

 

Put tomatoes and lemon in a pan, add the water and sugar. Cook for about 1 hour or until it jells when tested.

Pour into warm sterilised jars and seal.

Can be used immediately but will keep for 3-4 months when stored in a cool, dark space.
