Here is another wonderful spice mix you need to have as a staple in your pantry. This is so aromatic and warming and makes a fabulous addition to soups, tomato sauces, and lentils, but it can also be rubbed on fish, chicken and I especially like it on lamb. Once again, you can buy this mix in supermarkets of specialty shops but I prefer to make my own – it is so simple!
Baharat
4 teaspoons sweet paprika
4 teaspoons ground cumin
4 teaspoons ground black pepper
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon hot paprika
1/2 teaspoon ground coriander
Place the seven spices in an airtight small jar, give it a good shake and you have it ready to use. It will keep for up to 12 months in the pantry out of direct sunlight.
